Something I like to make a lot is the 3 ingredient pumpkin chocolate chip cupcake, or muffin. I guess it depends on if you frost it or not. We like it both ways over here. I have blogged about them before:

Yesterday the kids asked for cupcakes. I didn’t mind saying YES because I have this healthier recipe that they love. As I was making them, I was remembering 2 things about them. #1: They are usually a little less moist than I would like. #2 They are usually WAY bumpy on top. #3 They have mostly turned out smaller than I would like. I tweaked a couple of things & it worked out well for me. So, I thought I’d share this advice for you to use next time your get a hankering.

#1: Add 1 tablespoon of coconut oil to help with the moisture. Make sure your coconut oil isn’t too hard or it won’t mix well in your batter.

#2: They are usually pretty bumpy on top, so I took the back of a spoon & leveled them before baking. They are almost some of the drop cookie recipes. They are going to pretty much keep their shape. They aren’t going to really rise like a normal cupcake recipe.

#3 Because they don’t rise much like your average cupcake or muffin, you need to fill up your cupcake liner. I know we’re so used to the 3/4 full, but, in this case, FILL ‘ER UP!
