Pumpkin Muffins



Pumpkin Muffins

2 cups of whole wheat flour

1 tsp baking powder

1/4 tsp baking soda

1 tsp all spice

1/4 tsp cinnamon

1/8 ground cloves

sprinkle of nutmeg

2/3 cup of brown sugar

1/3 cup of white sugar

1/4 cup of oil

1/2 cup apple sauce

3/4 cup canned pumpkin

1/8 cup of sour cream

1/3 cup of milk

1/4 golden raisins.

Preheat oven to 400.  Grease or line your muffin tin.

Combine dry ingredients & then add everything else.  I used a hand mixer too, but don’t over mix it.  You want it a little lumpy.

I used a spring loaded scoop to fill my muffin cups. Fill them 3/4 full.

Bake for 15 mins or until a toothpick comes out clean & muffins are springy.

Allow to cool 10 mins

I chose to top mine with some cream cheese icing I had in the fridge & some sprinkles.  Fun breakfast for the kiddos.
